Recipe by Melie’s Kitchen
Ingredients:
3 small Turkish-style flatbreads (I get mine fresh from Hesari Supermarket in Panmure)
200g raclette cheese, very thinly sliced
2 Tbsp runny honey + extra to serve
2 Tbsp roughly chopped fresh thyme + extra to serve
1 ½ tsp aleppo chili flakes
Method:
Preheat your oven to high grill.
Place flatbreads on a large oven tray (don’t line it with baking paper as it can burn under the
grill). Arrange the thinly sliced raclette cheese in a single layer over the flatbreads. Drizzle over
the honey and sprinkle with the thyme. Drizzle over some EVOO and season lightly with flaky
salt.
Grill on the upper oven rack for 5-6 minutes, until the cheese is very golden brown and
bubbling. The edges of the bread will get lightly charred. Sprinkle over the aleppo chili flakes
and cut into wedges.
Garnish with an extra drizzle of honey and some thyme leaves, if desired. Serve hot.
